Crab-Stuffed Flounder

  1. Combine the crabmeat, saltines, mustard, and Worcestershire sauce, then season to taste. Combine the egg white and 1 T mayonnaise, then stir in the crabmeat mixture.
  2. Brush the fillets with melted butter, place them in a buttered baking dish, spoon the crabmeat over the fillets, drizzle with remaining butter, and bake at 400 degrees for 15 minutes.
  3. Lightly beat the egg yolk, then stir in 5 T mayonnaise. Remove the fillets from the oven, top with the egg yolk mixture, and garnish with the parsley and paprika. Increase the oven to 450 degrees and bake the fish until golden and bubbly.
  4. Plate and serve hot.
